Student Culinology® Competition
2014 Student Culinology® Competition
Student teams competed for a $4,000 first place award by developing a proposal for a Pacific Northwest regional, food truck cuisine concept featuring a grab-and-go seafood item, as a component of a complete meal, for school food service (grades 9-12), addressing sodium concerns which includes both gold standard recipes and the corresponding product formulations. The concept was based on Pacific Northwest regional cuisine and featured seafood as well as a sodium reduction technology from ingredient partner companies. On the day of the competition, finalists created the fresh product version of their school food service concept, and were judged in part against how well the commercialized components match up against the gold standard.
