Student Culinology® Competition
2014 Student Culinology® Competition
Student teams will compete for a $4,000 first place award by developing a proposal for a Pacific Northwest regional, food truck cuisine concept featuring a grab-and-go seafood item, as a component of a complete meal, for school food service (grades 9-12), addressing sodium concerns which includes both gold standard recipes and the corresponding product formulations. The concept must be based on Pacific Northwest regional cuisine and feature seafood as well as a sodium reduction technology from ingredient partner companies. Letters of intent to participate are due by September 30, 2013. Selected finalists will commercialize and ship their grab-and-go seafood item to the competition site in Portland, OR. On the day of the competition, finalists will create the fresh product version of their school food service concept, and be judged in part against how well the commercialized components match up against the gold standard. RCA's 2012 Student Culinology Competition was held at the Culinary Institute of America - San Antonio on March 22, 2012. Student teams competed for industry-wide recognition and a first prize of $5,000.
