For the first time ever, the Twin Cities District Dietetic Association will be holding a joint membership meeting in September with the Research Chefs Association North Central Region.  This a great opportunity  to learn about the pioneering work of Research Chefs in the emerging discipline of Culinology® and network with fellow professionals who focus on food.  In addition, we will hear an informative presentation on food allergy and intolerance, and some new research on the relationship between diet and immunity. This informative evening will include a buffet dinner featuring gluten and allergen free foods.

6:20 – 7:00- Presentation:  “What is Food Allergy and Intolerance?” Dr. Arnold S. Leonard, MD, PhD Professor Emeritus of Surgery, University of Minnesota

 Learning Objectives1.  Describe the immune response to food allergy and food intolerance2.  Describe the difference between a food allergy and food intolerance3.  Identify functional food components that enhance immune response 4.  Describe the role of Culinology® and the Research Chef in the development of foods and ingredients for individuals requiring a modified diet 

* Dr. Leonard was Professor of Surgery and Head of the Pediatric Surgery Department at the University of Minnesota.  Currently, Dr. Leonard is focused on cancer research in genetic engineering.  Dr. Leonard is an expert in the area of the immune system and its relationship to cancer. He is especially interested in the role of foods and nutrients that act as antioxidants in reducing the incidence of cancer.   Dr. Leonard will give a brief overview of how the immune system is involved in food allergy and food intolerance, and discuss the importance of diet in the management and prevention of these disorders.  Dr. Leonard serves on the medical advisory board of Pure Living Food and Beverages.
